3rd Win in a Row for Temasek Polytechnic at Food & Hotel Asia Culinary Challenge 2012

The team from Temasek Culinary Academy at TP was crowned the Overall Champions for the Dream Team Challenge at the recently concluded Food & Hotel Asia Culinary Challenge 2012. This makes it the third win in a row for TP - an unprecedented achievement!

The Dream Team Challenge is held every two years in conjunction with Food & Hotel Asia and is well-known to be a high-pressure, arduous, on-the-spot, all-encompassing food & beverage service and production competition.

This year, the TP team comprised two front-of-house service staff, a chef and a back-of-house member who provides valuable support during the competition. Members had to work together to serve a 3-course meal to a table of three guests and a panel of four judges within a two-hour time frame.

The Dream Team Challenge covers every aspect of service and food production from set-up of the back work area, a display kitchen work station, setting the guest’s table correctly, reception and seating of guests. Judges also look at the service of wine, table-side presentation of a cocktail, a salad, dessert and a speciality coffee. Teams are judged on their performance of service excellence and professionalism, teamwork and coordination, poise, presentation, product knowledge, hygiene, sanitation practices and the temperature and taste of the food and beverages served.

This year, a total of 12 teams competed. This third win in-a-row affirms the excellence, commitment and professionalism of the staff and students at Temasek Culinary Academy. It is also testament to the excellent cross diploma efforts at TP. The first win came in 2008, followed by the second in 2010.

The TP team comprising Chee Shi Jing, Khor Chia Chern and Chow Pak Teng, seniors from the Hospitality & Tourism Management (HTM) course together with Chef Travor Tan Kok Yong (Culinary Instructor, Culinary & Catering Management) were managed and led by TP staff, Goh Hock Quee (Team Manager and Head Coach, CCM Senior Lecturer).

Assisting the team were also HTM students Frederick Tan Yan Kuang and Krystofer Charles Lam, as well as CCM Service Instructors Leonard Chong Yeou Ming, Nicholas Malik and Mark Fong Kim (Ms).
