Synopsis

The programme is designed to validate and give due credence to the achievements of culinary professionals through a joint certification by The Culinary Institute of America (CIA) and Temasek Polytechnic (TP). The programme will enhance the culinary knowledge of chef participants and acquaint them with the latest techniques in the culinary world. Participants will not only hone their craft in the Culinary Arts but also Personnel Management and in Financial Administration at levels corresponding to their career stages.It gives every culinary professional the credentials needed to enhance their position and increase their marketability. Certifications from the CIA and TP represent the ultimate “stamp-of-approval”, recognized by food service operations throughout the world.

Course Objectives

  1. To develop food service professionals with the essential culinary, management and financial skills, techniques, and knowledge to help them succeed within a highly competitive industry.
  2. To sharpen and expand participants’ culinary skills, knowledge, and management techniques; to increase participants’ awareness of the latest culinary trends
  3. To give graduates the credentials needed to enhance their position, increase their marketability, and elevate their financial appeal to both present and future employers.

Hinnerk von Bargen, C.H.E.

Associate Professor in Culinary ArtsHinnerk von Bargen is an Associate Professor at The Culinary Institute of America (CIA). As a part of his job he develops and teaches various courses from fundamental culinary arts over ethnic cuisines to advanced cookery to a diverse clientele in the college’s continuing education department. He is also actively involved in the design, proctoring and judging of ProChef certification program. Additionally he takes part in product research and development for a variety of clients of the CIA’s Industry service division. A Certified Hospitality Educator (C.H.E.), Chef von Bargen holds a Master Chef certificate from the Hotel School in Hamburg, Germany. He completed two apprenticeships in his native Germany before beginning his career, which included chef positions in several high end hotels in Europe, as well as at the Sun City Cascades Hotel in Bophuthatswana, South Africa and the Kempinski Hotel Beijing in the People’s Republic of China.

Amy Daga, MA Mgt.Lecturer, Hospitality & Tourism Division

Amy graduated in Hotel Management & Catering Technology with a first class. She specialised in the Food and Beverage Department, and worked at The Oberoi, Mumbai, a member of the Leading Hotels of the World. Thereafter she worked with Chelsea Plaza Restaurants at The Chutney Mary in London. Amy pursued her Masters in Management at the University of Essex after which she was appointed Food & Beverage Manager at The Wivenhoe House Hotel in Essex, known for its elaborate banqueting facilities and Prince Albert Restaurant. Amy has also successfully run her own catering establishments, both in India & the UK. She has also been co-consultant for various restaurant renovation & promotional projects. Amy currently teaches Food and Beverage modules at The Tourism Academy @ Sentosa.
