Mastery. The first ‘big idea’ that Mr. Ong Ye Kung, Acting Minister for Education (Higher Education and Skills) expounded on when describing SkillsFuture. The idea is that an individual should attain a level of expertise so deep that it opens the door to creativity and innovation.
This is an idea that has been ingrained in the School of Business and flows through all its diploma courses where learning is hands-on and practical. As they say, the proof of the pudding is in the eating.
Students from the Diploma in Culinary & Catering Management (CCM) showcased their mastery in culinary skills during the FHA Culinary Challenge 2016 when two student teams, Team DJ and Team ZP won a Gold Medal and a Silver Medal respectively in the “Class 12: Hot Cooking – Two to Tango Apprentice Competition (Practical)”.
Each team comprised two apprentice chefs and CCM’s teams comprised one Junior year student and three Senior year students. Team DJ and Team ZP had to compete with a total of 73 international teams from hotels, restaurants and training institutions, from countries including Singapore, Malaysia, Hong Kong, Taiwan and South Korea. Every team had to prepare one cold appetiser and one hot main course for three persons. Both teams won over the judges with their execution skills and creativity of their dishes. The teams’ achievements and mastery of the culinary arts were only made possible by the dedication of CCM’s experienced culinary instructors who spent many hours guiding and mentoring the teams.
