Module Overview

Would you like to go on a discovery journey into the food and beverage (F&B) industry? This module aims to provide students with an enriching and exciting hands-on learning experience in different aspects of food studies through food safety & sanitation, food tasting activities, pasta and dessert cookery, and basic dining practices. Students will learn food safety and sanitation processes, and explore rudimentary cooking, baking and pastry techniques as well as food service elements. In addition, after learning the basics, students will get the opportunity to participate in an exciting hands-on culinary competition.

 

Note: Tasting/consuming of ingredients is required.

 

This module will be conducted within a duration of 22.5 hours.

What You'll Learn

At the end of the module, students will be able to:

 

  1.  Identify the way flavours act on the sensory experience of food
  2. Practise good food safety and sanitation processes
  3. Execute cooking and baking/pastry techniques
  4. Describe components of a table setting
  5. Execute two napkin folds

 

Assessment Components
Students will be assessed based on the following:

 

  1. Class Participation
  2. Tasting Assignment
  3. Dining Service
  4. Food Fight

 

Completion Criteria
Students are required to:

 

  • Fulfill at least 67% of the attendance and
  • Obtain a pass mark of at least 50% upon completion of the module.
