Mr Xu, a graduate of hospitality school Shatec, used to work with veteran chef Sam Leong when he was with TungLok Group, and later as a culinary instructor at Temasek Polytechnic. Over the past 10 years, he has been running an F&B consultancy firm called Project Chef, offering a range of services from kitchen design to menu planning to culinary training.
